The Department of Biological and Biomedical Sciences is dedicated to understanding cell, molecular and systems biology and clinical diagnosis of disease and treatments, and advancing this knowledge through research and teaching. Project Specifics: The reduction of foodborne disease has been a FSA priority since its inception in 2000 and foodborne disease incidence is generally considered to be preventable with the application of good personal hygiene and food safety practices. Cooking is recognised as a point in the food chain where risks to consumers can be minimised by thorough cooking according to the guidelines on products; however, for Hepatitis E virus (HEV), we do not know fully what cooking practices, both time and temperature, are sufficient. The aim of the proposed project is to develop a model which will efficiently predict thermal death for HEV. As part of this work, experimental data is required to be carried out to add to that present in the literature in order to potentially predict time/temperature relationship required to remove/reduce HEV in a particular matrix. This work is essential to industry to help support further research and to ensure public health safety and confidence in pork and other food products. The role holder will contribute to technical support with direction from the lead researcher to facilitate the timeous completion of the research project. The specific expertise required includes molecular/ microbiological/ cell biology techniques with proven skills in scientific quality assurance methods underpinned by good laboratory practice. Background experience in the field of Virology is preferred. The applicant should have a degree in Microbiology or equivalent.
